This Gavi is made with 100% Cortese grapes, a varietal that yields crisp, lime scented white wines of straw color. The Cortese grape grows well in the southeastern Piedmont hills close to Asti and Alessandria. The use of Cortese to produce Gavi wines dates back to 1659. Castellari Bergaglio vineyards are situated in the Tassarolo region characterized by clay and kaolinite deposits.

Harvest and Crush notes
The grapes were handpicked on September 6 to 15 and immediately crushed. The free run juice collected in vats was stored 24hrs at low temperature for a natural clarification process. Berry’s skins were collected in separate vats for a short crio-maceration process to optimize extraction of floral and fruit scents. The two musts were then blended and fermented in stainless steel vats.
Winemaker's comments
Intense floral notes of hawthorn and lily with scents of almonds, green apple and banana open up to subtly pungent citrus, hay and mint. Elegantly balance between fruitiness and acidity. The Fornaci Gavi is an ideal match for fish, calamari, sushi and white poultry.
